不同运输方式对桔红心大白菜物流品质的影响

Effects of different transportation modes on the logistics quality of orange leafy head Chinese cabbage

摘要 为研究不同运输方式对桔红心大白菜物流品质的影响,以"天正橘红62号"大白菜为实验材料,选择5种运输方式:PE袋包装常温运输(A)、预冷后泡沫箱常温运输(B)、预冷后泡沫箱加冰运输(C)、预冷后泡沫箱加蓄冷剂运输(D)、低温0℃运输(E)进行实验。结果表明,B、C、D、E4种运输方式与常温运输(A)相比均可抑制桔红心大白菜可溶性固形物含量、Vc含量、还原性糖含量、可溶性蛋白含量等指标的下降,抑制失重率和相对电导率的上升;5种运输方式中,运输方式E的桔红心大白菜物流品质最好,其次是运输方式D,依次是运输方式C、B,运输方式A物流品质最差,保持品质时间最短。因此运输时间在12h内可以采用PE袋包装常温运输(A)方式运输,在24h内可以采用预冷后泡沫箱常温方式运输(B),如超过24h则最好使用预冷后泡沫箱加冰运输方式(C),超过48h可以采用预冷后泡沫箱加蓄冷剂运输(D)或0℃低温冷藏方式运输(E)来保证桔红心大白菜的物流品质。该研究结果可为桔红心大白菜保鲜运输方式选择提供参考。 In order to study the effects of transportation modes on the logistics quality of orange leafy head Chinese cabbage,'Tianzhengjuhong NO.62' was selected as the research object.Five common modes of transportation were selected as follows:transportation of PE bag at room temperature (A),transport of pre-cooled foam box (B),pre-cooling foam box ice transportation (C),pre-cooling foam tank plus cold storage agent transportation (D),pre-cooling and low temperature 0 ℃ transportation (E).The results showed that B,C,D and E could inhibit the decrease of soluble solids content,Vc content,reducing sugar content,soluble protein content and the increase of weight loss rate and relative conductivity of orange leafy head Chinese cabbage compared with normal temperature transportation (A).Among the five modes of transportation,the logistics quality of orange leafy head Chinese cabbage in mode E is the best, followed by mode D,followed by mode C and mode B,mode A is the worst and the time to maintain quality is the shortest.Therefore,transportation mode A can be used within 12 hours,mode B can be used within 24 hours,and mode C is the best way to use if more than 24 hours,and mode D or E can be used for more than 48 hours to ensure the logistics quality of orange leafy head Chinese cabbage.The results of this study can provide a reference for the selection of fresh-keeping transportation mode of orange leafy head Chinese cabbage.
