基于电子鼻与电子舌建立青稞格瓦斯货架期预测模型 被引量:4

Establishment of a predictive model for the shelf life of highland barley kvass by electronic nose and electronic tongue

摘要 采用电子鼻与电子舌技术,结合ASLT加速实验,建立青稞格瓦斯货架期预测模型。将青稞格瓦斯储藏于25、35、45℃条件下,以感官、pH、可溶性固形物、透光率为主要指标,综合分析在不同温度下青稞格瓦斯品质随时间的变化,并应用Q10模型建立货架期预测模型。结果表明:在25、35、45℃下青稞格瓦斯货架期为18、12、6d。将储藏温度与货架期进行拟合得到货架期预测模型:Y=-0.6X+33,R^2=1(Y为货架期;X为储藏温度)。选取28、38℃验证模型准确性,结果表明预测值与实际值差异较小,说明此模型可初步预测青稞格瓦斯的货架期,该模型的建立为格瓦斯的工业化生产奠定了基础。 The electronic nose and electronic tongue technology was combined with the ASLT accelerated experiment to establish a forecasting model for the shelf life of the highland barley kvass.Sensory,pH, soluble solids and light transmittance at different storage temperatures (25,35 and 45 ℃) were used as the main indicators to analyze the quality change of the highland barley kvass with time,and the Q10 model was used to establish the prediction model of shelf life.Results showed that:the shelf life of highland barley kvass was 18,12 d and 6 d at different storage temperatures (25,35 ℃ and 45 ℃).The forecasting model for the shelf life of the highland barley kvass was established by fitting the storage temperature to the shelf life:Y=-0.6X+33,R^2=1 (Y was the shelf life;X was the storage temperature). The accuracy of the model was verified at 28 ℃ and 38 ℃.The result showed that the difference between the predicted value and the actual value was small,showed that this model could preliminarily forecast the shelf life of the highland barley kvass,and the foundation for the industrial production of kvass might be laid by this model.
