宰前称重对试验猪肉质及血液生化指标影响 被引量:1

Effects of Pre-slaughter Weigh on Meat Quality and Blood Biochemical Indexes in Pigs

摘要 选择体重100~120kg杜长大商品猪177头,研究宰前称重与否对试验猪肉质性状及血液生化指标的影响。结果表明,L值和b值称重组分别比未称重组提高3.16%(p<0.05)、8.70%(p<0.01),24hL值和pH称重组分别比未称重组提高5.19%(p<0.01)、0.88%(p<0.01),24ha和b值未称重组分别比称重组提高5.17%(p<0.01)、12.94%(p<0.01)。丙二醛、乳酸、皮质醇、促肾上腺皮质激素、白细胞介素-1β、结合珠蛋白、去甲肾上腺素、多巴胺、肾上腺素都以称重组较高,分别比未称重组提高15.38%(p<0.01)、14.95%(p<0.05)、17.46%(p<0.05)、6.68%(p<0.01)、23.21%(p<0.01)、10.47%(p<0.01)、21.34%(p<0.01)、10.72%(p<0.01)、10.87%(p<0.01);总抗氧化能力未称重组比称重组提高9.13%(p<0.01),其他指标组间差异不显著。 One hundred and seventy-seven pigs (Duroc×Landrace×Yorshire) with a weight of 100-120 kg were selected to study the effects of pre-slaughter weighing on the meat quality and blood biochemical parameters. The results showed that compared with unweighed group, L value and b value of the weighed group were increased by 3.16%(p<0.05),8.70%(p<0.01)respectively, the L value and pH of weighed group at 24h were increased by 5.19%(p<0.01),0.88%(p<0.01)respectively, a value and b value at 24h of unweighed group were increased by 5.17(p<0.01), 12.94%(p<0.01)respectively. MDA, LD, COR, ACTH, IL-1β, HPT, NA, DA and Adrenaline of the weighed group were increased by15.38%(p<0.01),14.95%(p<0.05),17.46%(p<0.05),6.68%(p<0.01),23.21%(p<0.01),10.47 %(p<0.01),21.34%(p<0.01),10.72%(p<0.01),10.87%(p<0.01)compared with the unweighed group respectively. T-AOC of the weighed group was increased by 9.13%(p<0.01)compared with the weighed group. But there were no significant differences in other indicators between the weighted and unweighted group.
