《食品理化分析技术实验》课程中的问题与改革

摘要 《食品理化分析技术实验》是食品质量与安全专业学生必修的一门实验课程。但是在教学中存在标准曲线、标准加入法与内标法概念模糊不清,学生不熟悉标准曲线的绘制及参数意义,忽略了重复性和有效数字的重要性等问题。本文结合作者多年的教学实践,针对食品质量与安全专业,分析了《食品理化分析技术实验》实验教学中存在的问题和注意事项,并对其教学内容和方法提出了改革,以期获得更好的教学效果。 Food Physical-chemical Testing is a compulsory experimental course for students majoring in Food Quality and Safety. However, there are some problems in teaching, such as confusion of standard curve, standard addition and internal standard methods, unfamiliar with the drawing of standard curve and the significance of parameters, ignoring the repeatability and the importance of significant digits. Based on years of teaching experiences, the teaching situation and matter needing attention were analyzed, and the reform measures were put forward in terms of content and mode combining the characteristics of Food Quality and Safety major, good results in teaching was achieved.
