摘要
采用邻二氮菲-Cu+-H2O2-碳酸盐缓冲液流动注射化学发光法对芦丁、槲皮素和桑色素清除·OH能力即抗氧化性进行测定,并对它们的抗氧化性进行比较分析.H2O2在Cu+的催化作用下分解产生·OH,·OH可以氧化邻二氮菲,产生化学发光.芦丁、槲皮素和桑色素可部分清除·OH,降低发光强度,以此测定它们清除·OH能力即抗氧化性的大小.实验结果表明,芦丁、槲皮素和桑色素均具有抗氧化性能,芦丁的抗氧化性最强,槲皮素次之,桑色素的抗氧化性最弱.
The antioxidant activity of Rutin,Quercetin and Mulberry pigment was determined by flow injection chemiluminescence with O-diazofene-Cu^+-H2O2-Carbonate buffer,and their antioxidant activity was analyzed and compared.Catalyzed by Cu^+,H2O2 decomposes to generate·OH,which can oxidize O-diazofene and generate chemiluminescence.Rutin,Quercetin and Mulberry pigment can partially remove·OH,which reduces the luminous intensity,so as to determine the antioxidant capacity of Rutin,Quercetin and mulberry pigment to remove·OH.The experimental results showed that Rutin,Quercetin and Mulberry pigment all had antioxidant properties,Rutin had the strongest antioxidant properties,Quercetin was the second largest,and Mulberry pigment had the weakest antioxidant properties.
