蜜饯中金属元素的研究进展

摘要 蜜饯是具有民族特色的传统食品,在我国历史悠久.作为一种休闲食品,深受百姓的喜爱.蜜饯富有多种矿物元素,对维持机体生理平衡有重要意义.但蜜饯在生产加工过程中,由于原料、生产环境、食品添加剂与人员操作等会给蜜饯产品带来一定的重金属污染风险.本文针对蜜饯中金属元素的研究进展进行阐释,以期为蜜饯产业的发展、风险控制及安全性评估提供理论依据. Preserved fruit is a traditional food with national characteristics, has a long history in China. As a kind of leisure food, loved by the people. Preserved fruit are rich in various mineral elements, which are of great significance to maintain physiological balance. However, due to the raw materials, production environment, food additives and improper operation of personnel, a certain amount of heavy metal pollution was caused to the preserved fruit in the process of processing. In order to provide theoretical basis for the development direction, risk control and safety evaluation of preserved fruit industry, the research progress of metal elements in preserved fruit was expounded.
