摘要
随着社会的发展,现阶段我国食品行业发展速度不断加快,此种背景下,如何通过良好的生物技术提升食品质量成为亟待解决的问题之一.基于此,本文立足于生物活性肽角度,分析了该物质在运动食品、军用食品以及食品添加剂等工业中的应用,研究了生物活性肽在保健/功能食品中的抗氧化、降血糖以及抗衰老等作用.
With the development of society, the development speed of food industry in China is accelerating. Under this background, how to improve food quality through good application of biotechnology has become one of the urgent problems to be solved. Based on this, this paper analyzed the application of bioactive peptides in sports food, military food and food additives, and studied the anti-oxidation, hypoglycemic and anti-aging effects of bioactive peptides in health/ functional food.
