摘要
目的了解甘肃省市售熟肉制品中亚硝酸盐的污染情况,为相关部门预防和控制亚硝酸盐食物中毒提供依据或参考。方法样品来自2个不同时段采集的熟肉制品,2011-2014年甘肃省熟肉制品亚硝酸盐含量监测数据,共采集样品247份;2015年采集来自兰州市不同经济水平的3个区(县)116份熟肉制品,共计363份样品,均采用分光光度法定量检测亚硝酸盐。结果甘肃省市售熟肉制品亚硝酸盐检出率85.40%,平均含量7.8 mg/kg,超标率3.31%;不同种类(χ^2=30.710)和不同采样点(χ^2=28.926)的熟肉制品,亚硝酸盐含量差异有统计学意义(均P<0.05)。结论甘肃省市售熟肉制品中亚硝酸盐使用普遍,且存在超量使用;应加强相关行业监管,提高从业人员安全防范意识,督促亚硝酸盐的规范使用,防止并减少亚硝酸盐食物中毒的发生。
Objective To investigate the status of nitrite pollution in cooked meat products sold in Gansu province, and provide reference basis for relevant departments to prevent and control nitrite food poisoning. Methods The samples of cooked meat were collected in two periods, while in 2011--2014, the nitrite data were collected from the cooked meat surveillance in Gansu province, and 247 samples were collected;116 samples were collected from 3 districts(counties) of Lanzhou city with different economic levels in 2015. Totally 363 samples were collected and the spectrophotometry method was taken for nitrite qualitative determination. Results The detection rate of nitrite in the cooked meat products was85.40%, with average content of 7.8 mg/kg and exceeding standard rate of 3.31%. There was statistical differences(P<0.05)among different kinds of meats(χ^2=30.710) and different sampling sites(χ^2=28.926). Conclusions The nitrite is widely used in the cooked meat products sold in Gansu province, and the overuse exists. The industry supervision and safety awareness of the jobholders should be enhanced, rational use of nitrite should be urged to prevent and reduce the occurrence of nitrite food poisoning.
