摘要
对大豆卵磷脂稳定性检测方法做了初步探究.比较了过氧化值、酸值、卵磷脂含量三种测定方法的优劣,确定采用紫外分光光度法测定卵磷脂含量,来判断大豆卵磷脂稳定性具有一定的可行性.该方法操作简便,灵敏度较高.对影响大豆卵磷脂储运环境中的光照、包裹材料、配伍三个因素进行了研究,实验表明避光、干燥、隔绝空气条件下,大豆卵磷脂稳定性最佳.
A preliminary study was made on the method for determining the stability of soybean lecithin. The advantages and disadvantages of three determination methods of peroxide value, acid value and lecithin content were compared, and the determination of lecithin content by ultraviolet spectrophotometry was determined. It was feasible to judge the stability of soybean lecithin. The method was simple and sensitive. Three factors affecting the storage and transportation environment of soybean lecithin, including light, wrapping materials and compatibility were studied. The results showed that soybean lecithin had the best stability under the conditions of avoiding light, drying and isolating air.
