The β-carotene soft capsule is a kind of health food with high content β-carotene, and β-carotene and soybean oil as main raw materials. Since β-carotene is an insoluble substance, it needs to be dissolved for a long time by using the original process (150 ℃), which results in serious degradation of β-carotene, high acid value and peroxide value. The β-carotene and soybean oil were used as raw materials, and the optimum process temperature was determined by taking dissolution temperature, length of time, content, acid value and peroxide value as examination indexes. The optimum temperature of β-carotene soft capsule was determined by comparing the content, degradation degree, acid value and peroxide value of three batches of products, so as to improve the production process.
