摘要
通过溶液共混法制备了ε-聚赖氨酸的浓度分别为0%、5%和10%的壳聚糖/ε-聚赖氨酸涂液及复合膜,对其抑菌性进行了表征,并将壳聚糖/ε-聚赖氨酸涂液应用于龙眼,考察其对龙眼的保鲜性能影响。结果发现,壳聚糖/ε-聚赖氨酸膜具有优异的抑菌性,其抑菌性随着ε-聚赖氨酸含量的增加而增强。随着ε-聚赖氨酸含量的增加,壳聚糖/ε-聚赖氨酸涂液能更好地抑制龙眼失重率和果皮褐变率的上升,延缓可溶性固形物的减少,从而提高了龙眼的好果率。在本实验中,ε-聚赖氨酸浓度为10%的壳聚糖/ε-聚赖氨酸涂液对龙眼的保鲜效果最好。
The chitosan/ε-polylysine composite solutions and films the ε-polylysine concentration of 0%,5% and 10% respectively were prepared by solution blending. The antibacterial activity of the chitosan/ε-polylysine composite films was characterized and the effect of chitosan/ε-polylysine coating solutions on longan fruit was also investigated. The results showed that the antibacterial performance of chitosan/ε-polylysine films was strong and enhanced with the increase of ε-polylysine content. It was found that the chitosan/ε-polylysine coating solution can effectively inhibit the increase of the weight loss rate and peel browning rate and delay the decrease of total soluble solid of longan fruit ,thus improving the good fruit rate of longan with the increase of the content of ε-polylysine. In the experiment,the chitosan/ε-polylysine with the ε-polylysine concentration of 10% has the best preservation for longan fruit.
