摘要 随着我国市场经济的高速发展,人们对酱香型白酒的要求逐渐提升。酱香型白酒不仅在国内有广阔市场需求,随着改革开放进程的不断深入,酱香型白酒已经打开国门面向国际市场迈进,成为我国白酒产业的主流产品。在人们对酱香型白酒生产工艺要求逐渐提升的趋势下,微生物技术逐渐应用于酱香型白酒的各个生产环节中,为酒的良好口感和高品质提供了技术保障。论文首先概述了微生物技术在酱香型白酒生产中应用的意义,在此基础上从多个角度出发,重点探讨了微生物技术在酱香型白酒生产过程中的应用,以供参考。 With the rapid development of China's market economy,people's requirements for Maotai-flavor liquor have gradually increased. Maotai-flavor liquor not only has a broad market demand in China,but with the deepening of the reform and opening up process,the Maotai-flavor liquor has opened the country to the international market and has become the mainstream product of China's liquor industry. Under the trend that people's demand for Maotai-flavor liquor production technology is gradually increasing,microbial technology has been gradually applied to all aspects of Maotai-flavor liquor production,providing technical guarantee for good taste and high quality of liquor. The paper firstly summarizes the significance of the application of microbial technology in the production of Maotai-flavor liquor. On this basis,this paper mainly discusses the application of microbial technology in the production process of Maotai-flavor liquor from several angles,for reference.
