主要讨论了两类食用变性淀粉的营养价值及安全性问题 ,交联变性淀粉的营养价值和安全性与未变性淀粉相似 ,单功能取代变性淀粉在每日允许摄入量范围内 ,对人体无副作用。
Nutritional aspects and safety of two types of modified food starch are discussed. Crosslinked starches are similar to unmodified starches in nutrition and safety; as to modified food starches containing monosubstituent groups, no side effect is found in the range of permissible daily intake as a human diet.
