摘要
对20匹不同年龄、不同性别、不同部位伊吾马脂肪分布、含量和成份的分析研究表明:马脂肪品质好,营养价值高。年龄对马脂肪分布、马肉中脂肪含量和脂肪成份、营养价值等影响显著。性别仅影响马肉中脂肪含量。
It was studied that the distribution, content and composition of horse fat on twenty Yiwu Horse with different ages, sexes and body parts.The result indicated that horse fat had superior quilty and nutritional value. The distribution of fat in body, fat content, composition and nutritional value of meat were significantly affected by age, Sex only affected fat content in meat.
