摘要
研究了在湿热环境下 8种物质对嗜热链球菌和保加利亚乳杆菌的存活率的影响。结果表明 :脱脂奶粉、甘油、蔗糖、葡萄糖、海藻酸钠是较好的抗湿热保护剂 。
In this paper ,we study 8 matters influence to the survival rate of S.t and L.b.when it live in the damp and hot environment.The result shows the skim milk Powder, Glycerin,Sucrose,Glucose, Sodium Alginate are better the damp and hot resistant protectors.By the orthogonal test it indicate mixing protectors effect better than single protectors.
