脂肪是食品的重要组成部分,但过量摄入会引发多种疾病。本文对脂肪替代品的种类及其在食品中的应用作了概述,并对其发展前景进行了展望。
Although fat is an important compon ent of food,many diseases are brough t by the excess of fat taken.Fat replacers and their appli cations in food industry are introduced.At the same time,the prospect of fat replacers was said.
