平顶山矿区小学生膳食与营养状况分析

摘要 为了解平顶山矿区儿童的营养现状 ,以便对其膳食指导特别是微量元素的营养指导提供科学依据 ,整群抽取平顶山矿区某小学住宿生 1 3 4名 ,采用 5日称重法进行膳食调查 ;原子吸收光谱法测定血清钙、铁、锌含量。结果表明 ,蛋白质、热量、Fe、Zn的摄入量可达RNI规定 ;而Ca的摄入量不足 ,仅达RNI的 45 6%。血清Ca、Zn、Fe值低于正常参考值范围的检出率分别为1 7 9%、 2 3 %、 1 5 %。可见该小学住宿生钙摄入不足 ,缺钙现象较为普遍 ,应调整膳食结构 。 To understand the nutritional status of primary school students in Pingdingshan Coal Mine and supply with scientific evidence for dietary guide especially for nutrition guide in trace elements,134 boarders in boarding school were sampled.Dietary diary was carried out with 5 day weighting method.The content of Ca,Fe,Zn in serum was determined by atomic absorption spectrophotometry.The results showed that the intakes of protein,energy,Zn and Fe almost get to RNI,otherwise the intake of Ca was much less than RNI,only meets 45 6% RNI.The rate of Ca,Zn and Fe in serum lower than standard was 17 9%,2 3%,1 5% respectively.It indicated that dietary Ca was insufficient,the Ca deficiency was prevalent.So the dietary composition should be adjust,and food rich in Ca should be supplied.
