随着消费者对食品的要求日益提高,优质蛋白质的需求亦日渐增加,作为重要的蛋白资源,血浆中的蛋白质极具发展潜力。血蛋白是重要的食用铁源,蕴含高量的蛋白质,可作为肉类替代品,其成本比肉类低。血蛋白不仅可提供优质的食用蛋白源,而且还可以减少因血的排放而造成的环境污染。
Beef plasma consists of various proteins which act as efficient emulsifiers. Due to its high protein and low fat content, the use of plasma is a cost-effective method to improve nutritive value of processed meat products. This article reveals the functional properties, meat applications and commercial potential of the ingredient.
