牛奶含有多种营养,其营养主要来自乳蛋白。牛奶的蛋白质中含有大约80%酪蛋白和20%乳清蛋白,乳清蛋白由白蛋白和球蛋白组成,这2种蛋白还可以再细分。而在肉类制品的应用中,则只需要考虑酪蛋白的特别功能。
