红景天是一种食药兼用植物,具有多种保健功能。利用其干燥根茎经乙醇提取后可得到含功能因子红景天苷1.1%的提取物,作为功效成分应用于面包生产中,结果表明:面粉中添加1%～3%的红景天提取物,对面包的感官质量无不良影响,可增加面包的持水性,减缓老化。其口感良好、风味独特,并具有保健作用。
