摘要
通过对钢都酒进行化学处理 ,分类收集组分 ,采用GC -MS联用技术对各组分进行分离与定性定量测定 ,分离并鉴定出35个化合物。
Gangdu Jiu'liquor was chemically treated and its flavour components were classified into 4 groups: phenolic, alkaline, neutral and acidic components. The 4 groups components were qualitatively and quantitatively analyzed by GC-MS, separately. 35 compounds from 'Gangdu Jiu' were identified in total. The flavour type of 'Gangdu Jiu' was determined as a heavy fragrance type.
