摘要 综合性实验是一种顺应教育改革发展的要求,具有创新思维,包含产品设计、生产、分析、检测等多模块的开放性整体实验。沈阳医学院实验中心围绕不同生产工艺技术要求及相关卫生标准设计开展“各类饼干及饮料类制品工艺综合实验”。结果显示,此综合性实验有利于培养学生综合研发与检测能力,提高了其对食品加工的实践技能和对食品加工过程的感性认识,达到学以致用的目的。 Comprehensive experiment is an open and integrated experiment that conforms to the requirements of educational reform and development and has innovative thinking,including product design,production,analysis,testing and other modules.The experimental center of Shenyang Medical College is designed to carry out comprehensive experiment of various biscuit and beverage products based on the technical requirements of different production processes and related hygiene standards.The results show that this comprehensive experiment is beneficial to cultivate students’comprehensive research and testing ability,improve their practical skills of food processing and perceptual understanding of food processing,and achieve the purpose of applying what they have learned.
