玉米青贮料对不同月龄安格斯牛的生长性能和肉品质的影响 被引量:9

Effect of corn silage on growth performance and meat quality of different month-age of Angus cows

摘要 试验旨在研究不同月龄的安格斯阉牛,在相同的饲养条件下,同时出栏,分析饲喂不同青贮料对不同月龄对其生长性能及肉品质的影响。选取健康、低月龄[15~20月龄、体重(246.10±38.25) kg]的安格斯牛5头,高月龄[20~25月龄、体重(294.20±96.21) kg]的安格斯牛5头。预试期10 d,正式试验期365 d。结果表明,高月龄组的活重、胴体重、净肉重、眼肌面积、背膘厚和背膘脂肪厚均显著高于低月龄组(P<0.05);两组的屠宰率、净肉率和肋间脂肪厚无显著差异(P>0.05);不同月龄对安格斯牛的背最长肌pH值、粗脂肪、剪切力、滴水损失和熟肉率均无显著影响(P>0.05)。在试验条件下,随着月龄的增加,安格斯牛胴体性状变化较大,高月龄组的胴体性状明显好于低月龄组,但是月龄因素对肉质性状影响较小。 The test was to study the effect of different ages of Angus cattle calves, fed with corn silage on growth performance and meat quality under the same feeding condition. Five healthy Angus cattles, low-month-old [15 to 20 months old, weight(246.10±38.25) kg], and five heads of high-month-old [20 to 25 month old, weight(294.20±96.21) kg]were selected. The pre-test period is ten days and the trial period is 365 days. The results showed that the live weight,sputum weight, net meat weight, eye muscle area, backfat thickness and backfat fat thickness were significantly higher in the high-month-old group(P<0.05) than in the low-month-old group. There was no significant difference in slaughter rate, net meat rate and intercostal fat thickness between the two groups(P>0.05). There was no significant effect on the longissimus muscle pH, crude fat, shear force, drip loss and cooked meat rate of Angus cattle at different ages(P>0.05). Under the condition of the study, the corpus callosum of Angus cattle changed greatly with the increase of age. The carcass traits of the high-month-old group were significantly better than those of the low-month-old group. However, the month-age factor had little effect on meat quality traits.
