摘要
“水为茶之母”,作为茶叶风味和品质的形成载体,可见水对茶汤风味及品质影响的重要性。随着环境污染问题日益突出,天然“好水”稀缺,现代人更多的选用自来水或包装饮用水来泡茶。主要介绍茶汤风味品质形成的来源,并总结了近年来水质对泡茶影响的研究状况,为饮用水在泡茶方面的应用和研究提供参考。
“water is the mother of tea”.As the carrier of tea flavor and quality,we can see the importance of water on the flavor and quality of tea soup.With the increasingly prominent environmental pollution problem and the scarcity of natural“good water”,people choose tap water or packaged drinking water to make tea.This paper mainly introduces the origin of the formation of the flavor quality of tea soup,and summarizes the research status of the influence of water quality on tea making in recent years,providing reference value for the application and research of drinking water in tea making.
