摘要
江湖菜,泛指极具巴渝地方饮食特色的一类有着重料、重味的本土原创菜品,是渝菜风味体系重要成分之一,是渝菜地标美食的代表。江湖菜代表着巴渝饮食的江河文化、乡土文化等,其重料、重味的烹调技法和不拘一格的大气、豪放、粗狂的饮食形式,从血脉里传承了古巴族和巴人彪悍、勇猛、豪放的性格及饮食习俗。
Jianghu Cuisine refers to the highly seasoned and flavored local and original cuisine.With extremely apparent characteristics of Chongqing,it is an important part of Chongqing Cuisine representing specialties of Chongqing Style.Jianghu cuisine represents the river and countryside culture of Chongqing's diet:its cooking methods featuring many ingredients and strong flavor,straightforward and uninhibited diet form have inherited the valiant,brave and hold characters and eating habits of ancient Ba nationality and the Ba people.
