食品中10种色素的高效液相色谱同时检测方法 被引量:2

摘要 随着食品加工产业的快速发展,企业通常会在食品生产中使用不同色素,主要是为了提升食品的色彩,刺激人们的食欲。通常来说,食品中使用最为广泛的色素颜色为黄色,而在食品添加色素的过程中,经常会出现色素违规添加的现象。色素过量会对人体健康造成威胁,因此,食品色素的检定比较重要,食品中10种色素的高效液相色谱同时检测方法对于食品检测有很大帮助。本文是笔者对色素概述、我国食品色素的现状、食品色素的安全评估以及食品中10种色素的高效液相色谱同时检测方法进行了简单概括,仅供参考。 With the rapid development of food processing industry,enterprises usually use different pigments in food production,mainly to enhance the color of food.Food appearance will give people the most intuitive feeling and stimulate people’s appetite.Generally speaking,the most widely used pigments in food show yellow color,and in the process of adding pigments to food,it is often found that pigments are added illegally.To some extent,excessive pigments will pose a threat to human health.Therefore,the national detection of food pigments is very important.Simultaneous detection of 10 kinds of pigments in food by high performance liquid chromatography is very helpful for food detection.In this paper,the author briefly summarized the overview of pigments,the status quo of food pigments in China,the safety assessment of food pigments and the simultaneous determination of 10 kinds of pigments in food by high performance liquid chromatography for reference only.
