应用CNCPS和NRC模型评定汝州老窖湿酒糟的营养价值

Application of CNCPS and NRC Models to Assess Nutritional Value of Ruzhou Laojiao Wet Distiller’s Grains

摘要 试验旨在采用康奈尔净碳水化合物-蛋白质体系(CNCPS)和NRC模型评定汝州老窖湿酒糟的营养价值。分析汝州老窖湿酒糟常规营养成分及17种氨基酸,应用CNCPS 6.5方法计算其蛋白质(CP)和碳水化合物(CHO)组分,采用NRC(2001,2016)模型估测其真可消化有机物含量和能值。结果表明:以干物质基础计,①汝州老窖湿酒糟CP含量为15.64%。其中,氨基酸氮(AAN,CPE)、总必需氨基酸(TEAA)和中性洗涤不溶粗蛋白质(NDICP)分别占CP的62.27%、29.74%和59.76%;CHO含量为62.26%,其中中性洗涤纤维、糖类、淀粉和不可利用纤维分别占CHO的78.40%、1.14%、4.05%和27.33%。②消化能、代谢能、维持净能和增重净能分别为9.00、7.38、4.28和1.98 MJ/kg。结果提示,汝州老窖湿酒糟CP含量较高,且以NDICP和AAN(以氨基酸形式存在的氮)形式存在的居多;CHO含量最高,但能为NFC(非纤维性碳水化合物)菌提供的能量较低;总可利用能值较低。 The purpose of this experiment is to evaluate the nutritional value of Ruzhou Laojiao wet distiller's grains by using Cornell net carbohydrate-protein system(CNCPS)and NRC model.The conventional nutrient composition and 17 amino acids of Ruzhou Laojiao wet distiller's grains were analyzed.The components of protein(CP)and carbohydrate(CHO)were calculated based on the principle of CNCPS 6.5.The NRC(2001,2016)model was used to estimate the true digestible organic matter content and energy value.The results showed as follows:On a dry matter basis,①CP of Ruzhou Laojiao wet distiller's grains was 15.64%.Among them,amino acid nitrogen(CPE),TEAA and NDICP accounted for 62.27%,29.74%and 59.76%of CP respectively.CHO was 62.26%.NDF,sugar,starch and unusable fiber accounted for 78.40%,1.14%,4.05%and 27.33%of CHO respectively.②Digestive energy,metabolic energy,maintenance net energy and weight gain net energy were 9.00,7.38,4.28 and 1.98 MJ/kg respectively.The results suggest that the Ruzhou Laojiao wet distiller's grains have higher CP and mostly exist in NDICP and AAN forms;CHO content is the highest,but it can provide low energy for NFC bacteria;the total available energy value is low.
