摘要
植物内生真菌是产生天然活性物质的丰富的资源宝库,也是获得天然色素的一种重要途径。本研究主要从光照、温度、金属离子、pH值、氧化还原剂及常见食品添加剂等方面,探讨了分离自猫爪草根中一株内生真菌镰刀菌S4所产红色素的稳定性。结果表明,该菌所产红色素在515nm波长处有最大吸收峰。红色素具有较好的光热稳定性;碱性条件具有增色护色效应,对酸敏感;金属离子Ca^2+、Fe^2+、Na^+、Mn^2+、K^+有增色护色效果,对Mg^2+、Zn^2+、Cu^2+较敏感;还原剂Vc及氧化剂H2O2对色素有一定的破坏力;葡萄糖、蔗糖及乳糖能较好地保持红色素稳定。
Endophytic fungus in plants is a new type microbial resources with producing natural active substances and it is one of the main sources of natural pigments.In this study,we explored the effects of light,temperature,pH,metal ions,oxidant and reductant,common food additives on the stabilities of the red pigment produced by the endophytic fungus S4 from root of Radix ranunculi ternate.The results show that this red pigment has the highest absorption peak at 515nm,and is relatively stable to the light and temperature.Influence of alkaline condition is stable and has effect on enhancing the red pigment,but pigment is relatively sensitives to acidic condition.In the metal ions,Ca^2+,Fe^2+,Na^+,Mn^2+,K^+have color protection or burnish effect on the pigment,while Mg^2+,Zn^2+,Cu^2+have obvious adverse effect on the pigment.Vc and H 2O 2 have strong destructive power to the pigment.Moreover,several common food additives have good effect to maintain the stability of the red pigment.
