摘要
近年来肉鸡木质肉和白纹肉的发生率呈上升趋势,木质肉和白纹肉会影响鸡肉的口感和外观,降低鸡肉等级,影响消费者购买意愿,给肉鸡养殖业造成较大损失。本文主要综述了肉鸡木质肉和白纹肉的产生机理及其综合解决方案,以期为肉鸡养殖业健康发展提供借鉴。
White striping(WS)and wooden breast(WB)are poultry meat quality defects that affect the sensory quality of raw breast fillets as well as properties of cooked and further processed products,which may result in down-grading of products,affecting the acceptance,and increasing economic loss.Therefore,studying the mechanism of White striping(WS)and wooden breast(WB)and exploring solutions to alleviating these myopathies had significance in both theoretical and economic point.
