芭蕉芋抗性淀粉在降糖挂面中的应用 被引量:5

摘要 随着人们生活水平的提高及生活方式的变化,全球糖尿病患者不断增多,饮食治疗是治疗糖尿病的基础。抗性淀粉作为一种新型膳食纤维资源,具有调节血糖血脂及改善糖尿病患者症状的功效。芭蕉芋是一款优质的抗性淀粉原料,将RS3型芭蕉芋抗性淀粉应用于我国传统主食挂面中,研发一款符合糖尿病患者营养需求的营养挂面,既能满足糖尿病对食品营养的需要,又能丰富挂面种类,促进地方经济和我国挂面行业的发展。本文旨在为芭蕉芋的研究发展奠定基础。 With the improvement of people’s living standard and the change of life style,diabetes patients are increasing globally,dietary therapy is the basis of treatment of diabetes mellitus.Resistant starch,as a new resource of dietary fiber,can regulate plasma glucose and lipid metabolism and improve the incidence of diabetes mellitus.Canna edulis is a high-quality raw material for processing resistant starch.Applying the Canna edulis type 3 resistant starch to the traditional staple noodles in China,aim to researching and developing a nutritional noodle suitable for the nutritional needs of diabetic patients.It can not only meet the nutritional needs of diabetes mellitus,but also enrich the variety of noodles,promoting the development of local economy a noodle industry.The aim of this paper is to lay a foundation for the research and development of Canna edulis with high content of resistant starch.
