摘要 鹰嘴豆是世界第二大消费豆类,产量居世界豆类第3位,耐干旱、耐贫瘠,非常适合我国西北地区种植。鹰嘴豆含有人类所需六大营养素,富含多种植物蛋白和氨基酸、维生素、粗纤维、钙、镁、铁等成分,具有很高的食用和药疗价值,可用于日常食品及营养强化剂。选取了新疆、青海、甘肃等主产区的21份鹰嘴豆样品,对其色泽气味、杂质、水分、蛋白质、含油率、亚油酸等理化指标进行了试验论证及研究。 Chickpea is the second largest consumed bean in the world,and its output ranks third in the world.It is drought-tolerant and barren-tolerant,which is very suitable for cultivation in northwest China.Chickpea contains six major nutrients needed by human beings.It is rich in a variety of plant proteins and amino acids,vitamins,crude fibers,calcium,magnesium,iron and other components.It has high edible and medicinal value and can be used in daily food and nutritional fortifiers.In this paper,21 samples of chickpea from Xinjiang,Qinghai and Gansu provinces were selected.The physical and chemical indexes such as color,odor,pure grain rate,impurities,moisture,protein,oil content and linoleic acid were tested and studied.
