摘要
为改善蜂胶的水溶性,将其添加到西番莲果汁饮料中,研制一款功能性西番莲果汁饮料。将β-环糊精(β-cyclodextrin,β-CD)与蜂胶乙醇提取物(ethanol extract of propolis,EEP)制成复合物(compound of ethanol extract of propolis and beta cyclodextrin,EEP-βCD),测定EEP-βCD的水溶性和热稳定性,并对西番莲果汁饮料的工艺参数进行优化。结果表明:EEP与β-CD复合后,水溶性和热稳定性都显著提高(P<0.01);西番莲果汁饮料的最佳工艺参数为:西番莲果汁15%,木糖醇12%,EEP-βCD 0.6%。蜂胶与β-环糊精复合后水溶性、热稳定性和刺激性味道都得到改善,可将其应用于西番莲果汁饮料。
To improve the water solubility of propolis,so that it could be added to passion fruit juice beverage,and to develop a functional passion fruit juice beverage.β-cyclodextrin(β-CD)was combined with ethanol extract of propolis(EEP)to make a complex(EEP-βCD),and the water solubility and thermal stability of EEP-βCD were examined.The process parameters of the lotus juice beverage were optimized.After the combination of EEP and β-CD,both water solubility and thermal stability were significantly increased(P<0.01).The optimal technological parameters of passion fruit juice beverage were:passion fruit juice 15%,xylitol 12%and EEP-βCD 0.6%.After compounding with β-cyclodextrin,the water-soluble,heat-stable and irritating taste of propolis was improved,and the complex could be applied to passion fruit juice beverage.
