摘要
角蛋白作为羽毛的主要成分,由于分子中存在大量相互交联的二硫键、氢键和盐键等化学键,导致其结构稳定难以有效降解,给环境造成了极大的压力。利用微生物代谢所产的角蛋白酶对其进行降解,相较于物理化学水解的方法更加高效、经济和环保,引起了国内外学者的高度关注。在对比分析角蛋白物理、化学、生物等降解法的基础上,对角蛋白酶的来源、理化性质和应用研究等进行了综述,以期为角蛋白酶相关研究提供参考。
The keratin is a major component of feathers,which is very stable and difficult to be degraded because of the existence of a large number of disulfide bonds,hydrogen bonds and salt bonds intersecting with each other in the molecular structure,and thus causes great pressure to the environment.Compared with the methods of physical and chemical hydrolysis,the advantage of higher efficiency,economy and environmental protection of the hydrolysis produced by microbial metabolism attracted the attention of scholars.In order to provide references for relating researches of the keratin,this article reviewed the properties and application of the keratin by comparing and analyzing the degradation methods.
