摘要
淀粉的含量是评价火腿肠品质的一个重要指标,其测定过程存在的干扰项主要是各种糖类物质,由于糖类物质可以与莫利施试剂产生明显的显色反应,本实验主要引入了莫利施反应来判断洗涤液中是否含有糖类物质,以及通过优化前处理从而得到更准确的测定食品中淀粉含量的方法。实验结果表明,引入莫利施反应可以有效避免重复实验或复检,提高实验的准确性和效率。
The content of starch is an important index for the quality of ham sausage.The main interference in the determination process is mainly various carbohydrates,which can produce obvious color reactions with Molisch reagent.Therefore,the Molisch reaction was introduced to determine whether there were carbohydrates in the washing liquid and to obtain a more accurate method for the determination of starch content in food by optimizing pretreatment.It was shown that the Molisch reaction could effectively avoid repeated experiments or repeated tests,improving the accuracy and efficiency of the experiments.
