摘要
明胶属于天然高分子材料,具备了良好的生物学性能,可在医药方面开发成止血海绵、外科敷料等;明胶还具备了一系列的优异物性如成膜性、表面活性、两性聚电解质特性等;除此之外,食用明胶也是一种纤维蛋白,无脂肪,乳化力强,利于消化食物等。本文主要论述明胶的制备及其应用研究。
gelatin is a kind of natural polymer material,which has good biological properties and can be developed into hemostatic sponge,surgical dressing and so on.Gelatin also has a series of excellent properties,such as film-forming,surface activity,amphoteric polyelectrolyte and so on.In addition,edible gelatin is also a kind of fat-free high protein,strong emulsification power,conducive to digestion of food and so on.In this paper,the preparation and application of gelatin were reviewed.
