摘要
海藻多糖是获取食品添加剂的天然良好原料,琼胶、卡拉胶、海藻酸钠、海藻酸丙二醇酯等海藻多糖在食品添加剂领域有着广泛的应用,对食品工业的发展起到积极促进作用。本文从上述几种海藻的理化性质、功能及目前在食品添加剂领域的应用等几个方面进行综述,并对今后海藻多糖在食品添加剂领域的发展方向和关键性问题提出建议,以期进一步开发海藻多糖功能,促进其在食品添加剂领域有更广泛的应用。
Seaweed polysaccharide is a natural and good raw material for food additives.Seaweed polysaccharides(such as agar,carrageenan,sodium alginate,propylene glycol alginate et al)have been widely used in the field of food additives,and have played a positive role in the development of food industry.This article summarizes the physic-chemical properties,functions and current application in the food additives of the above seaweed polysaccharides,and gives some suggestions on the development direction and key issues of seaweed polysaccharides in the field of food additives in the future,to develop the function of seaweed polysaccharide and promote its wider application in the field of food additives.
