摘要 [目的]研究不同烤烟品种间美拉德反应产物的差异,分析其与烟叶品质的关系,筛选培育优质烤烟品种。[方法]测定不同烤烟品种美拉德反应产物和烟叶色值,对烤后烟叶外观质量和感官质量进行评价。[结果]不同烤烟品种美拉德反应产物存在差异,产物含量高的烤烟品种,烤后烟叶外观质量和评吸质量较好。[结论]美拉德反应产物可以作为筛选优质烤烟品种的评价指标。 [Objective]To study the differences in Maillard reaction products among different tobacco varieties,to analyze its relationship with tobacco quality,and to select and cultivate high-quality tobacco varieties.[Method]Maillard reaction products and color values were detected in different tobacco varieties,and appearance quality and sensory quality were evaluated.[Result]There were some differences in Maillard reaction products among different tobacco varieties,and the tobacco varieties with high product content had good appearance quality and evaluation quality.[Conclusion]Maillard reaction products can be used as evaluation indicator for screening high-quality tobacco varieties.
