摘要
食品物理加工技术前沿课程为江苏大学食品科学与工程硕士的核心课程。该文对食品科学与工程硕士课程中开设食品物理加工技术前沿课程教学进行总结,分析了食品物理加工技术前沿课程特点、教学内容及教学中的重点及难点,探讨"物理+食品"复合型食品科学与工程人才的培养方式。
The frontier course of food physical processing technology is the core course of master of food science and engineering of Jiangsu University.Teaching of the frontier course of food physical processing technology in the master's course of food science and engineering were summarized,and characteristics of frontier course of food physical processing technology,teaching contents,key points and difficulties in teaching were analyzed to explore training mode of food+physical compound food science and engineering talents.
