摘要
目的研究啤酒花中的矿物质含量,为啤酒花的开发和利用方面提供数据依据。方法采用硝酸-高氯酸消解啤酒花样品,原子吸收光谱法测定啤酒花中钠、铁、钾、钙、镁、锌、锰、铜8种矿物质的含量,原子荧光光谱法测定啤酒花中硒、砷、汞3种矿物质的含量。结果每100 g啤酒花中矿物质含量分别为钠:217.50 mg,钾:1975.00 mg,钙:1924.35 mg,镁:148.75 mg,铜:0.80 mg,铁:27.30 mg,锌:4.59 mg,锰:4.70 mg,砷:27.30μg,硒:0.74μg,汞:0.32μg。加标回收率为95.00%~106.57%。结论啤酒花中富含对人体有益的矿物质元素,其中钾和钙含量最为丰富。
Objective The individual mineral composition of hops was investigated.Methods The mineral contents such as Na,Fe,K,Ca,Mg,Zn,Mn and Cu of hops were determined by atomic absorption spectrophotometry using nitric acid-perchloric acid.While the Se,As and Hg of hops were evaluated by atomic fluorescence spectrometry.Results The Na,K,Ca,Mg,Cu,Fe,Zn,Mn,As,Se,and Hg of 100 g hops were:217.50 mg,1975.00 mg,1924.35 mg,148.75 mg,0.80 mg,27.30 mg,4.59 mg,4.70 mg,27.30μg,0.74μg,and 0.32μg,respectively.The recovery rate is 95.00 to 106.57%.Conclusion Hops are rich in minerals that are beneficial to the human body.The most abundant mineral element in hops are K and Ca.
