摘要
红薯含多种营养成分,具有保健功能,符合当代食品工业发展的需要,红薯原料资源丰富,价格低廉,工艺简单,可开发系列品种,同时红薯的膳食纤维也具有较广阔的发展前景。本文主要概述了红薯及红薯膳食纤维的组成、保健功能研究状况。
Sweet potato contains a variety of nutrients,has health care functions,meets the needs of the development of the contemporary food industry,requires abundant raw material resources,low prices,simple technology,and can develop a series of varieties.At the same time,the dietary fiber of sweet potato also has a broad development prospect.This paper mainly summarized the research on the composition,extraction and health function of sweet potato and sweet potato dietary fiber.
