摘要 玉米蛋白是玉米加工过程中的主要副产物,由于其水溶性差并且缺少人体必需氨基酸,导致玉米蛋白在食品行业中的应用受到诸多限制。目前,玉米蛋白已经被发现的功能特性主要有高F值、保肝、降血压、抗氧化等。为了得到更易于人体吸收的有多种功能的玉米天然活性肽,学者们采用挤压膨化、超声等预处理手段对玉米蛋白的结构进行改善,使其结构松散容易被分解;再经过酶解、化学合成等方法获得分子量较小的多肽;接着通过大孔吸附树脂、凝胶过滤色谱、超滤等分离提纯法获得具有活性功能的玉米多肽,从而在食品工业中得到应用。本文综述了国内外玉米活性肽的功能性质、制备以及纯化方法的研究进展,同时对目前国内外的研究状况、存在问题、开发前景进行分析和展望。 Zein is a major by-product of corn processing, and its application in the food industry is limited due to its poor water solubility and lack of essential amino acids. At present, the functional properties of zein have been found to have high F value, liver protection, blood pressure lowering, and antioxidant resistance. In order to obtain corn natural active peptides with multiple functions that are more easily absorbed by the human body, scholars have used pretreatment methods such as extrusion and ultrasound to improve the structure of corn protein, so that the structure is loose and easy to be decomposed;A method of chemical synthesis or the like obtains a polypeptide having a small molecular weight;and then a corn peptide having an active function is obtained by a separation and purification method such as macroporous adsorption resin, gel filtration chromatography, ultrafiltration, etc., thereby being applied in the food industry. In this paper, the research progress on the functional properties, preparation and purification methods of corn active peptides at home and abroad were reviewed. At the same time, the research status, existing problems and development prospects at home and abroad were analyzed and prospected.
