电子鼻和电子舌分别通过模仿哺乳动物的嗅觉和味觉对样品的感官品质进行客观快速评定,因其具有独特的优越性而被广泛应用于多个领域。重点对国内外电子鼻、电子舌及电子鼻和电子舌联用在水果检测方面的应用最新研究进展进行综述,以期为水果采后的快速检测分析提供理论参考。

The electronic nose and electronic tongue could evaluate the sensory quality of samples objectively and quickly by mimicking the olfactory and gustatory system of mammals.The electronic nose and electronic tongue had been widely used in many fields due to their unique advantages.The recent research advance of electronic nose(EN),electronic tongue(ET)and the combination of EN and ET in the application of fruit detection at home and abroad was reviewed.The theoretical reference for the rapid detection and analysis of fruit postharvest was provided.
