宁夏贺兰山东麓两种葡萄酒香气特征及成分关联分析 被引量:3

摘要 采用气相色谱质谱联用技术比较分析了宁夏贺兰山东麓葡萄酒产区甲、乙两种葡萄酒的香气成分。共鉴定出18种香气成分。结果表明:乙葡萄酒的主要挥发性香气成分比甲葡萄酒含量略高,其中,乳酸乙酯、正己醇、2-苯基乙醇、丁二酸单乙酯、丁二酸二乙酯都高于甲葡萄酒,并且乙葡萄酒的综合感官评价评分较高。研究结果对调整和改善贺兰山东麓地区酿酒葡萄品种结构和组成、促进酿酒葡萄产业发展方面具有极其重要的意义。
