淮山的营养价值及加工研究进展

The Nutritional Value and Processing Research of Huaishan Yam

淮山又名山药,为一种多年生的草质藤本植物,既可以作为粮食、饲料、蔬菜、中药,还具有能源的材料特性,是一种具有多重功用、极富经济价值的农作物。由于淮山具有丰富的食用和药用功效,故本文以淮山为研究对象,对淮山的营养价值及加工研究进展进行了初步探讨。

Huaishan yam, also known as yam, is a kind of perennial herbaceous vine, which can be used as grain, feed, vegetable, traditional Chinese medicine, and has the material characteristics of energy. It is a kind of crop with multiple functions and rich economic value. Because Huaishan has rich edible and medicinal effects, this paper takes Huaishan as the research object, and makes a preliminary discussion on the nutritional value and processing research progress of Huaishan.
