摘要
本文以压缩干粮为例对菌落总数进行了不确定度评定,探讨了其对生产过程的指导。依据GB 4789.2—2016《食品微生物学检验菌落总数测定》和JJF 1059.1—2012《测量不确定度评定与表示》对菌落总数进行了不确定度评定。结果显示,该批压缩干粮的菌落总数的测量不确定度为2200~4100 CFU/g,不符合卫生规范要求。本文通过不确定度评定研究了食品生产企业生产过程中存在的问题。
Taking compressed dry grain as an example,this paper evaluates the uncertainty of the total number of bacterial colonies,and probes into its guidance to the production process.The test process is basised on the National food safety standard Food Microbiological:Aerobic Plate Count,and evaluated the uncertainty of the total number of colonies according to Evaluation and Representation of Measurement Uncertainty.The results show that the cereal bar of uncertainty measurement of the total number of colonies is 2200—4100 CFU/g.The total number of colonies of cereal bar does not meet health standards.In this paper,the problems existing in the production process of food production enterprises are studied through uncertainty evaluation.
