广西地区3种螺的含肉率及营养成分分析 被引量:7

摘要 采用国标法测定了广西地区的中国圆田螺、方格短沟蜷和环棱螺的含肉率及营养成分。结果表明:中国圆田螺、方格短沟蜷、环棱螺的含肉率分别为21.37%、14.45%和11.21%,中国圆田螺的含肉率分别比方格短沟蜷和环棱螺高47.89%(p<0.05)和90.63%(p<0.01)。3种螺肉水分、粗蛋白质及粗脂肪含量的差异均不明显。但钙、磷、铁、锌含量的差异显著,环棱螺的钙、锌含量均高于中国圆田螺(p<0.05)和方格短沟蜷(p<0.05),方格短沟蜷的磷含量高于中国圆田螺和环棱螺(p<0.05),中国圆田螺的铁含量高于方格短沟蜷(p<0.05)。 The national standard method was adopted,and the meat content and nutrient composition of Chinese round snail,semisulcospira cancellata and bellamya in Guangxi area were determined.The results showed that the meat content of Chinese round snail,semisulcospira cancellata and bellamya were 21.37%,14.45%and 11.21%respectively.The meat content of Chinese round snail was 47.89%(p<0.05)and 90.63%(p<0.01)higher than that of the semisulcospira cancellata and bellamya respectively.The differences in water,crude protein and crude fat content of the three kinds of snail meat were not significant.However,the difference of contents of calcium,phosphorus,iron and zinc were significant,and the contents of calcium and zinc in the bellamya were higher than that in the Chinese round snail(p<0.05)and the semisulcospira cancellata(p<0.05),and content of phosphorus in the semisulcospira cancellata was higher than that in Chinese round snail and bellamya(p<0.05),and the content of iron in the Chinese round snail was higher than that in the semisulcospira cancellata(p<0.05).
