不同菌株及培养基质对蛹虫草氨基酸组成的影响 被引量:3

摘要 菌株和培养基质是影响蛹虫草产品品质的2个关键因素。选用L3、林3、8-ch和Z2-CH共4个蛹虫草菌株培育蚕蛹虫草,测定各蚕蛹虫草氨基酸组成;同时选择蛹虫草菌株L3,分别接种到家蚕幼虫、柞蚕蛹和灭菌小麦等不同培养基质上,测定所得蛹虫草的氨基酸组成。结果显示,不同蛹虫草菌株对蚕蛹虫草氨基酸种类没有影响,均为17种,但是对蚕蛹虫草的氨基酸总含量、必需氨基酸含量、各氨基酸含量等均存在极显著影响(P<0.01);接种L3菌株的蚕蛹虫草氨基酸总含量最高达398.28 mg/g,7种人体必需氨基酸的总含量也最高,达到98.34 mg/g。接种L3菌株的各种蛹虫草样品中的氨基酸种类均为17种,但各氨基酸含量有所不同,蚕蛹虫草中氨基酸总含量最高(P<0.01),达349.87 mg/g,柞蚕蛹蛹虫草次之,小麦蛹虫草氨基酸总含量最低,为233.64 mg/g;蛹虫草中必需氨基酸含量则以柞蚕蛹蛹虫草最高,蚕蛹虫草次之,小麦蛹虫草最低;另外,蚕蛹虫草中丝氨酸、甘氨酸、丙氨酸和酪氨酸4种氨基酸含量极显著高于其他蛹虫草(P<0.01),其中甘氨酸含量最高,达93.50 mg/g。研究结果表明,不同培养基质及不同菌株对蛹虫草的氨基酸种类没有影响,但对各氨基酸含量及总含量影响较大,接种L3菌株培育的蚕蛹虫草在生产氨基酸制品方面具有较高的应用价值。 Cordyceps militaris strain and culture media are 2 key factors affecting the quality of aweto. Four kinds of C. militaris strains, L3, Lin 3, 8-ch and Z2-CH were selected to inoculate silkworm larvae to determine amino acid composition in cultured aweto. Meanwhile, L3 strain was selected to inoculate silkworm larvae, tussah pupae and sterilized wheat respectively to identify amino acid composition in cultured aweto. The results showed that C. militaris strains had no effect on the type of amino acid, all of which were 17 types, but had extremely significant effect on content of total amino acid, content of essential amino acid and content of individual amino acid(P<0.01). Content of total amino acid peaked at 398.28 mg/g in aweto cultured on silkworm larvae inoculated with L3 strain, and the total content of 7 essential amino acids was also the highest, which was 98.34 mg/g. Types of amino acid in different aweto samples inoculated with L3 strain were always 17, whereas the amino acid content was different. Content of total amino acid in aweto cultured on silkworm larvae inoculated with L3 strain was the highest(P<0.01), reaching to 349.87 mg/g, followed by that cultured on tussah pupae, and that cultured on wheat had the lowest content of 233.64 mg/g. Content of essential amino acid in aweto cultured on tussah pupae was the highest, followed by that cultured on silkworm larvae and that cultured on wheat. In addition, contents of serine, glycine, alanine and tyrosine in aweto cultured on silkworm larvae were extremely significantly higher than those cultured on other media(P<0.01), among which glycine content as the highest was up to 93.50 mg/g. The results showed that different culture media and strains had no effect on the amino acid types, but had greater impacts on the content of each amino acid and content of total amino acids. Aweto inoculated with L3 strain has greater application value in the production of amino acid products.
