摘要
目的了解新乡市食品中主要食源性致病菌污染状况,预防微生物食源性疾病的发生。方法依照《2017年河南省食品安全风险监测方案》要求,以新乡市市内4区和7个县区的11类169份食品为研究对象,采样地点包括各大超市、快餐店、学校食堂、路边摊及固定摊位。对样品分别进行致泻大肠埃希氏菌、蜡样芽孢杆菌、创伤弧菌、副溶血性弧菌、弯曲菌、小肠结肠炎耶尔森氏菌、单增李斯特氏菌、沙门氏菌等10种食源性致病菌进行检测。结果 169份食品样品中检出共8株致病菌,总检出率为4.73%,其中2株(13.33%)弯曲菌,4株(7.27%)致泻大肠埃希菌,1株(6.25%)创伤弧菌,1株(6.25%)副溶血性弧菌。结论新乡市食品受到不同程度的食源性致病菌的污染,特别是部分生食食品中像生禽肉、双壳贝类中有一定的检出率,应加强市售食品的监测力度,减少可能引起食源性疾病的危险因素,同时做好本市食品安全的风险评估。
Objective To understand the contaminating characteristics of pathogenic bacteria in food,and prevent microbial foodborne diseases in Xinxiang. Methods In accordance with"The food safety risk monitoring program in Henan province in 2017", a total of 169 foods of 11 categories were studied in 4 districts and 7 counties of Xinxiang, Sampling locations included major supermarkets, fast-food restaurants, school canteens, street stalls and fixed stalls. 10 kinds of foodborne pathogens such as diarrheagenic Escherichia coli、Bacillus cereus、Vibrio vulnificus、Vibrio parahaemolyticus、Campylobacter、Yersinia enterocolitica、Listera monocytogenes、Salmonella and so on, were tested. Results 8 strains of pathogenic bacteria were detected from 169 food samples, the total detection rate was 4.73 %. Among them,camyplobacter genusthe 2 strains(13.33 %), diarrheagenic Escherichia coli 4 strains(7.27 %), Vibrio vulnificus 1 strain(6.25%),Vibrioparahaemolyticus1 strains(6.25%). Conclusions There was food borne pathogen contamination in our city in some degree. Some food, especially some raw products such as raw poultry meat、bivalve molluscs can be polluted by pathogenic bacteria, supervision and management of food should be strengthened to reduce the risk factors of food-borne disease, and do well the risk assessment of food safety timely in Xinxiang.
