冷链物流下杏鲍菇采后物流保鲜技术研究 被引量:6

摘要 随着经济的快速发展与科技技术的不断提高,人们对食物的有效储藏及保鲜的要求日渐升高。冷链物流作为一种新兴的运输方式,可以充分保证农产品在运输过程的新鲜度,防止农产品腐败变质。以杏鲍菇为例通过研究冷链物流保鲜的原理与实际应用,结合食用菌冷链物流保鲜发展现状中的起步晚,基础薄弱、食品安全标准和监测体系有待完善、食用菌经过冷藏保鲜技术后口感及卖相变差等问题,提出防雾薄膜、纳米薄膜、真空贮藏技术、冷鲜保藏法等保险方式,并进行简单比较,针对不同的食用菌可采用不同的保鲜方式以实现对食用菌更安全、更持久的保鲜,较少因保鲜问题造成的食用菌资源浪费。 With the rapid development of economy and the continuous improvement of science and technology,people have increasingly higher requirements on effective storage and preservation of food.Cold chain logistics,as a new transportation mode,can fully guarantee the freshness of agricultural products in the transportation process and prevent the deterioration of agricultural products.Taking Pleurotus eryngii as an example studying the principle and practical application of keeping fresh of cold chain logistics,combined with the fresh edible fungus cold-chain logistics development present situation of the late start,weak foundation,needs to improve food safety standards and monitoring system,plearotus eryngii taste after frozen preservation technology and presents some problems,put forward anti-fog film,nano film,vacuum storage technology,such as cold fresh preservation method of insurance,and a simple comparison,according to different edible fungus can adopt different ways of keeping fresh of edible fungi in order to achieve more secure,more lasting fresh,less for keeping fresh of edible fungi resources waste.
