摘要
食物是人类赖以生存的最根本的物质基础,也是我们获取能量、创造价值的源泉。饮食文化是人类在漫长的历史发展中逐步探索形成的智慧结晶。研究作为文化和历史载体的食物,不仅可以了解其自然生态条件,而且能够管窥彼时社会、历史、人文环境的来龙去脉。日本饮食文化的形成与变迁,是其适应独特的自然生态、人文、历史环境的结果。以食物为窗口研究人类社会文化,对更好更全面地审视和认识人类社会具有重要作用。同时,在全球化的巨变时期,相关研究的推进也可以展开应对变迁中的社会文化议题方面的思考。
Food is the fundamental material basis of people’s life and is the source for us to obtain energy and create value.While dietary culture is the crystal of human wisdom which is formed through the exploration of human in the development of the long history.Food,as the carrier of culture and history,can not only help understand the natural ecological conditions in behind through research,but also observe details of the society,history and cultural environment at that time.The formation and transition of Japanese dietary culture is the out come of its adaption to the unique natural ecology and cultural,historical environment.It is of great signifi cance to take food as a window to research human social culture in order to understand human society better and more comprehensively.Meanwhile,faced with the great change of globalization,the promotion of relative re searches can also offer some thoughts to questions such as how to confront social culture in transition.
